We select the best suppliers and analyze their processes so that they fully meet all our quality and Food safety needs for our customers who, throughout the world, place their trust in us. For instance, it is only upon conducting a careful check-up phase that the mullet roes, which we use to produce our famous bottarga, can start being processed in our factory. The accurately timed drying process and the low salt content guarantee that unmistakable taste, appreciated by the most discerning palates. We only use Mediterranean scrubland-scented fine woods, such as beech, poplar and oak wood in all our smoked products, thus spreading the Sardinian flavors around the world.
Gulf of Bugerru
Sarda Affumicati's factory is located in Buggerru, a town in the southwestern coast of Sardinia. Built in 1864 as a mining village, Buggerru is located in an enchanting landscape at the mouth of the Malfidano Canal. In the surrounding area there are sites of outstanding natural beauty, such as the famous beach of Cala Domestica and the high cliffs of Pranu Sartu. For us, such breathtaking and unique natural sceneries have been a continuous inspiration in our ongoing mission to look out for taste and beauty.
Ingredients for two people: 100 g of packaged octopus, 100 g of rocket or red radicchio, extra virgin olive oil, lemon.
Fry two eggs in a pan with extra virgin olive oil, place them on a plate, sprinkle some grated bottarga when the eggs are still warm.
Ingredients for 4 people: 350 g of spaghetti, 70 g (approx.) of grated bottarga, 4 spoons of extra virgin olive oil, 2 cloves of garlic.
